Kale White Bean Sausage Soup
MAKING THE SOUP
Ingredient list is listed below but here is a little description of how I made this soup. First, you will need a large stock pot, if you do not have one, here is a good one off amazon: Cooks Standard Stockpots Stainless Steel . You can choose whatever size is good for you and your family.
First, chop 1 yellow onion, and chop 1-2 large carrots then add some olive oil to the stock pot and turn the heat to medium heat, once the oil is hot add the chopped onion and carrots and let them soften.
Then, take one can of white beans and mash it up in a separate bowl and add the mashed beans to the mixture. Add two cups of water and 1 whole jar (32 oz) of Zoup! Chicken Broth.
Add about 5 cups of organic kale (it cooks down a lot), stir the kale in to combine and then put the lid on. Add crushed red pepper and Italian seasoning. Let that simmer for a little.
While that simmers, take a separate pan and cook the sausage. Add 1 clove of garlic to the pan with some olive oil and brown the sausage. Once done, take a plate, add a paper towel on top and place the sausage on the bowl to drain extra grease.
Add the other can of beans and the cooked sausage to the stock pot. Let that simmer for about 5-10 minutes. Grab a bowl and serve with parmesan cheese, yum!

WHAT THE KALE?!
The number one thing I hear when it comes to kale is that people have a hard time eating it due to the texture. I love this soup and because of all the flavors you’re going to be like “that’s kale?!” But seriously this soup may even make kale more appeasing to you. Who knows, maybe your family and friends will enjoy it too.
This recipe is very easy to make and can be made in bulk for meals throughout the week.
CHOOSING THE INGREDIENTS
If you or family members are vegetarian, you can leave the out the sausage and choose vegetable broth instead to make it a plant- based meal. When choosing sausage, I just bought the regular Jimmy Dean Sausage, but you can use whatever ground sausage you want. Also, CLICK HERE for the best broth I have ever used- Zoup! Kale White Bean Sausage Soup
Ingredients
- 2-3 tbsp olive oil
- 1 yellow onion
- 2 large carrots
- 32 oz of broth (chicken or vegetable)- see link in blog for recommended broth.
- 2 cups of water
- 5 cups of kale
- 1 clove of garlic
- 2-3 cans of beans
- 1 pack of pasture raised ground pork or turkey sausage (omit if plant based)
- Parmesan cheese
- Crushed red pepper
- Italian seasoning
- Salt and pepper to taste
Instructions
- Heat the oil in stock pot over medium heat until shimmering. Meanwhile, peel and chop yellow onion and carrots. Mash one of the cans of white beans in a separate bowl.
- Add onions, carrots, cook until softened, then add mashed beans to the pot.
- Add water and broth to the pot, bring to a boil.
- Stir in the remaining beans (left whole) and kale, slowly incorporate into the pot. Reduce heat let simmer for about 20 minutes until kale is tender. Season with crushed red pepper, Italian seasoning, salt and pepper.
- Meanwhile, take a separate pan heat olive oil until shimmering, add garlic clove and cook the sausage until brown
- Once sausage is done, place the sausage on a plate covered with a paper towel (to drain grease)
- Add the cooked sausage and last can of beans to the pot. Let simmer for about 5-10 minutes
- Top with Parmesan cheese
- Enjoy!
